Bromelain is a protease derived from the pineapple, usually from the stem.
Parameters:
(1) protein composition
(2) number of units of activity per mg protein
1 unit of bromelain activity is defined as release of 1 micromole of p-nitrophenol from N-alpha-Z-L-lysine p-nitrophenyl ester per minute at 25°C and pH 4.6.
Preparations of bromelain are often 30 to 50% protein.
