USDA Grades:
(1) Grade A
(2) Processing Grade - can be used in the manufacture of other products; it is not for retail sale
(3) Substandard
Qualities of Grade A:
(1) < 68.9% solids content by weight (using Brix calibrated at 68 degrees Fahrenheit)
(2) uniform color
(3) good flavor for color class (below)
(4) good odor
(5) free of off flavor and off odors
(6) free of cloudiness, turbidity, and sediment
(7) free of any damage
Grade A color classes:
(1) golden
(2) amber
(3) dark
(4) very dark

Maple syrup is a target for counterfeiters due to its relatively high cost and demand. Many syrups sold in store are not true, undiluted maple syrup.
