"Gutter oil" is an interesting term from China for a range of substandard cooking oils. It has proven hard to eliminate because of the relatively low risk and high profits entailed.


Feature shared by these products: cheap with high margins

 

A gutter oil may consist of one or more of the following:

(1) recycled cooking oil

(2) adulterated oil (not food grade)

(3) low grade oil labeled as a higher grade

 

Oil for recycling may come from:

(1) restaurants

(2) grease traps

(3) fatbergs

(4) slaughterhouse waste

 

A gutter oil may range in quality from moderate to being unfit for human consumption.

 

Production of the recycled or adulterated oil is not illegal, as it can be used for industrial production. It becomes illegal when the product is sold for cooking.

 

A gutter oil may be difficult to distinguish from higher grade oils based on appearance and packaging alone.
